Authentic Pad Thai

Sweet, sour, and savory stir-fried rice noodles with a complex tamarind sauce built upon centuries of street food tradition.

Ingredients

  • 200g dried flat rice noodles
  • 200g shrimp or firm tofu
  • 3 tbsp tamarind paste
  • 2 tbsp premium fish sauce
  • 2 tbsp palm sugar
  • Crushed roasted peanuts

Method

Soak noodles in warm water until pliable but still firm.

Melt palm sugar, tamarind, and fish sauce into a sticky glaze.

Stir-fry proteins over extremely high heat, pushing them to the side to scramble the eggs.

Toss in the drained noodles and sauce, stir-frying vigorously until the sauce is absorbed. Garnish heavily.
