Spicy Salmon Poke

The purest expression of fresh fish. Sashimi-grade salmon cured lightly in a spicy, savory marinade.

Ingredients

  • 400g sashimi-grade salmon fillet
  • 3 tbsp high-quality soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp Sriracha or chili oil
  • 2 scallions, thinly sliced
  • 2 cups seasoned sushi rice

Method

Cut the salmon into perfectly uniform half-inch cubes.

Whisk together soy sauce, sesame oil, and Sriracha in a glass bowl.

Gently fold the salmon and scallions into the marinade. Let sit for exactly 5 minutes.

Serve immediately over warm, seasoned sushi rice.
